TOFU NUGGETS WITH PEANUT BUTTER SAUCE

High-protein, crunchy snack! Worried about calories? Just skip the sauce. It's still delicious!



Ingredients

- 300g firm tofu

- 100g oats

- 200g soy yoghurt

- 1 tsp paprika

- 4 tbsp soy sauce

- 1⁄2 tsp cumin powder

- 1 lime (juice)

- 2 tbsp peanut butter

Instructions


1 - Preheat the oven to 180C.

2 - Drain the tofu and dry it with a paper towel.

3 - Cut it into long rectangular pieces and transfer them into a bowl.

4 - Blitz half of the oats until they get a fine texture (like oat flour), then incorporate the rest of

the oat adding a pinch of salt. Leave it aside.

5 - In a separate bowl, mix the yoghurt well with the paprika and the cumin powder.

6 - Coat the tofu with the yoghurt mix and then paneer it with the oat mixture, making sure the tofu is totally covered.

7 - Place the coated tofu on a non-stick oven tray or use some parchment paper.

8 - Bake for 15 minutes.


Peanut butter sauce

1 - In a bowl combine the peanut butter, soy sauce and lime juice.

2 - Mix well and leave it aside until the tofu is ready.


To plate

Serve the tofu on a plate with the dipping sauce on the side.
