TOFU CHOCOLATE MOUSSE WITH OAT CRUMBLE

Not the lowest calorie snack but it serves 2 and is high in protein so I say it's worth it :)

Ingredients
- 300g silken tofu
- 1 tsp cocoa powder
- 100g dark chocolate
- 1 tbsp agave syrup
- 1 tbsp peanut butter
- 40g oats
- 1 scoop of vegan chocolate powder
Instructions
Mousse
1 - Heat up a pot at medium-low heat with some water. Meanwhile, chop the chocolate and
transfer it into a bowl.
2 - Place the bowl in the pot with water to gently melt the chocolate (bain-marie) over low heat. Make sure the water level in the pot is lower than the edge of the bowl.
3 - Add the silken tofu, agave syrup, cocoa powder and melted chocolate to a blender.
4- Blend until smooth and pour into a glass and refrigerate for 20 minutes.
Crumble
1 - Preheat the oven to 170C. In the meantime, cover a baking tray with parchment paper.
2 - In a bowl mix the peanut butter, oats and chocolate powder. This will be your crumble mix.
3 - Place the crumble mix on the tray and bake for 8 minutes.
4 - Take it out of the oven and let it cool down while the mousse is getting ready.
To plate
Divide the mousse into two bowls and sprinkle it with the crumble mix!
If you're a fan of berries, you can also add some (optional). ENJOY!
