TEMPEH IN BLACK BEAN SAUCE AND BROWN RICE

A perfect post-workout meal to replenish your energy and help muscle growth.



Ingredients

- 150g tempeh

- 100g kale

- 2 spring onion

- 1 ⁄2 cucumber ( diced)

- 1 cup tenderstem broccoli

- 1 cup of cooked brown rice

- 2 tbsp black bean sauce


Instructions:


For the rice

1 - Put the rice in a container, wash it and then rinse it making sure you get rid of the starch

( repeat twice )

2 - Once it's clean, put the rice in a pot, add 2 cups of boiling water and leave to cook for

about 15 minutes

3 - When the rice is ready, give it a stir and cover it with a lid for 5 minutes while the rest of

the dish is ready


For the tempeh

1 - Preheat a frying pan at medium heat with a teaspoon of olive oil

2 - Cut the tempeh into medium cubes and place them in a container

3 - When the pan is nice and hot, add the tempeh and cook for 3 minutes on each side

4 - Add the black bean sauce when you notice that the tempeh is nice and golden

5 - Cook for another 5 minutes, then turn off the heat and set aside


For the broccoli

1 - Clean the broccoli and cut the stem

2 - Place it in the steamer for 5 minutes

3 - When ready, add a pinch of salt and pepper


For the cucumber

1 - Wash the cucumber and cut it into small cubes

2 - Also slice the spring onions


To serve

1 - In a bowl add the rice, followed by the black bean tempeh and then broccoli and

cucumber

2 - Serve with slices of spring onion
