SEED CRACKERS

This is great for the Minestrone soup but it's also nice to have it as a snack, eat it with veggies or with a dip.

Ingredients
- 125g flax seed
- 125g sunflower seed
- 125g pumpkin seed
- Pinch of salt
- 500ml water
Instructions:
1 - In a container combine all the ingredients making sure the water is covering all the
seeds.
2 - Cover the container with a lid or clingfilm and leave it in the fridge to rest for an hour. You will get a sticky, easy to spread, mix.
3 - Preheat the oven to 140C. Meanwhile, get a baking tray ready with baking paper.
4 - Spread the seed mix onto the tray 1 cm thick (you can add another pinch of sea salt if you like).
5 - Bake for 30 minutes until the seeds dry out.
6 - Take the tray out from the oven and leave it to cool down for 10 minutes.
7 - Break it into pieces and enjoy it as part of your meals.
