SALTY ROASTED CHICKPEAS

It's a meal base... No, it's a side... No - a snack! Heck, it's whatever you want it to be. More importantly, it's delicious!

Ingredients
- 2 1⁄4 cups chickpeas (cooked and drained)
- 2 1⁄4 tsp mixed dried herbs or Moroccan seasoning.
- 3⁄4 tsp salt
- 1⁄3 tsp black pepper
Instructions
1 - Preheat the oven to 204C and line a baking tray with parchment paper.
2 - Drain and pat the chickpeas with a kitchen towel. Place the chickpeas in a
bowl and add the seasoning, salt and pepper. Mix until chickpeas are evenly coated.
3 - Spread the chickpeas across the baking tray and bake for 20 minutes. Toss halfway.
4 - Let cool for 10 minutes and Enjoy!
Tips
Leftovers or extra portions can be kept very well in an airtight container for up to 3 days.
The longer you leave them, the more they will lose their crunchiness, so put them in the oven before eating them to crisp them back up!
If you have no Moroccan seasoning or prefer a different flavour, just use your favourite spice. Some great alternatives are curry powder, chilli powder, or provencal dried herbs. Or... if you like to keep things simple, just use the good ol' salt and pepper combo.
For a crispier texture (and a more intense flavour) add extra virgin olive oil. Of course, keeping in mind this will alter the calories stated on the nutritional info below.
