PISTACHIO AND MATCHA PROTEIN BITES

My go-to snack before a workout, or whenever I feel like having 'a little something'. Makes you feel full and gives you enough energy to push through a workout!

Ingredients
- 1⁄2 cup pistachios
- 1⁄2 cup sunflower seeds
- 1⁄2 cup shredded coconut
- 10 dates, pitted
- 2 tbsp coconut oil
- 1 scoop of protein powder
- 2 tsp matcha powder
Instructions
1 - Place all the ingredients into a strong blender, blitz until you get a dough mixture (it can
be a little chunky).
2 - Divide the mixture into 10 balls and roll using the palm of your hands.
3 - Coat the bites with some desiccated coconut or chopped pistachios (optional).
4 - Keep them in a jar or sealed container.
