NUTTY GRANOLA

Granola gives you lots of energy to tackle your workouts or just to feel energetic for a full-on day!

Ingredients
- 1⁄2 cup walnuts
- 1⁄3 cup pecans
- 1⁄2 cup coconut flakes
- 1⁄3 cup pumpkin seeds
- 1⁄3 cup almond flakes
- 1⁄2 cup macadamia nuts
- 3 tbsp flax seeds
- 3 tbsps hemp seeds

- 1 tbsp arrow starch
- 1 tsp vanilla extract
- 1⁄2 tsp cinnamon powder
- 2 tbsp maple syrup
- 1⁄4 cup coconut oil
- Pinch of sea salt
INSTRUCTIONS:
1 - Preheat the oven to 180C. And get ready with a large baking tray with parchment
paper.
2 - In a food processor add the nuts and the seeds, blitz one or two
times, or enough to chop just slightly ( you can also use a chopping board and a
knife instead). Place them in a large mixing bowl and leave aside.
3 - In a small bowl combine the melted coconut oil, vanilla, maple syrup, arrowroot
starch, cinnamon and sea salt.
4 - Add the syrup mixture into the bowl with the nuts and seeds and toss together
until thoroughly combined. Then, pour the mixture over the baking tray with
parchment paper, making sure not to spread out entirely for bigger granola chunks.
5 - Bake for 15 minutes, take the tray out from the oven and leave it to cool for at
least 5 minutes to allow the clusters to harden. Enjoy!
Tips:
Leftovers: will stay fresh in an airtight container for at least 2 weeks.
Extra ingredients: you could add cocoa nibs, raisins, sultanas, dried fruit, puff rice,
etc.
Change flavour: for a chocolate flavour and texture, melt vegan dark chocolate
and pour it onto the granola mix (when it is still warm), counting the
granola evenly. Leave it to cool down for 10 minutes until the chocolate has
hardened.
