CREAMY PASTA

This is too good! Although it's higher in carbs you can use it to your advantage to fuel up for a leg day or a tough cardio session!



Ingredients

- 500g cauliflower

- 30g nutritional yeast

- 500ml almond milk

- 50g cashew nuts

- 100g mixed mushrooms

- 1 cup of spinach

- 2 cloves of garlic

- 1tsp oregano

- 225g crumbled baked tofu

- 100g buckwheat pasta


Instructions:


Creamy sauce

1 - Cut the cauliflower into small florets and put them into a medium saucepan. Add

the cashew nuts, the almond milk, a cup of water and a pinch of salt.

2 - Cook the cauliflower mix at medium heat for 15 minutes or until the cashew nuts

have softened.

3 - When ready, turn off the heat, add the nutritional yeast, salt and pepper and blend

until you get a smooth mixture.

4 - Set it aside.


Pasta

1 - Boil the kettle, add the water into a pot with the pasta and cook for 8 minutes or

until the pasta is ready.

2 - Drain it and pass it through cold water to stop the cooking process while the rest

of the elements get ready.


Tofu

1 - Preheat the oven to 180C.

2 - Line a baking tray with parchment paper.

3 - Dry the tofu with some kitchen towel and break it into small pieces using your hands.

4 - Add the tofu to the baking tray with some salt and a drizzle of olive oil and the dry oregano. Bake for 15 minutes.

5 - When crispy, take it out of the oven and keep it on the side.


Mushrooms

1 - Clean and slice the mushrooms

2 - Preheat a frying pan on medium heat with a tablespoon of olive oil.

3 - When hot, add the chopped garlic and the mushrooms. Stir and cook for 5 minutes.

4 - Add the creamy sauce to the mushrooms mix and cook for another minute.

5 - Add the pasta and the spinach, mix all the ingredients well and taste it to

make sure it's well seasoned.

This is your creamy mushroom and spinach pasta.


To plate

Serve the warm pasta in a bowl and sprinkle the crispy tofu on top.

Note: You can use this type of creamy sauce to make mac & cheese or add any

other flavour or spice into the sauces (tomato, chilli, parley etc) to make a different

creamy sauce.
