CREAMY AVOCADO ON TOAST

One can never have enough bread recipes!

Ingredients
- Sliced wholemeal bread
- 1⁄2 avocado
- 100g mushrooms
- 15g pumpkin seeds
- 300g silken tofu
- 1 lime
- 1⁄2 tsp paprika
- salt and pepper
Instructions:
Creamy avocado
1 - In a mixing bowl, place the tofu, avocado, lime juice, salt and pepper and
mash it with a fork creating a creamy texture.
Toast
2 - Preheat the oven to 180C.
3 - Place the bread in the oven for 5 minutes and roast the pumpkin seeds for 3
minutes (if they need it).
Mushrooms
4 - Preheat a frying pan at medium heat, add a teaspoon of olive oil.
5 - Meanwhile clean and slice the mushrooms (do not wash them).
6 - Once the pan is ready add the mushrooms and cook for about 8 minutes.
7 - Add salt and pepper.
8 - Place the toasted bread on a plate, add the creamy avocado, mushroom,
roasted pumpkin seeds and a pinch of paprika.
9 - Serve with a glass of orange juice.
This is a great snack to get you going between meals. Nutritious, high in protein and super tasty, but light and quick - to eat and to cook!
Tip! If the avocado is still a little unripe, mash it on a plate first and then mix it with the tofu to make the spread. I only got this right on the second try ;)
