CINNAMON MAPLE BROWN RICE PUDDING

Another great twist on a classic dessert. The first spoon of this Rice Pudding always 'takes' me to some good memory of a family festivity and happy times.

Ingredients
- 1⁄4 cup brown rice (washed and drained)
- 1⁄2 tsp cinnamon powder
- 1⁄2 scoop vanilla protein powder (vegan)
- 1⁄2 tsp vanilla extract
- 1 cup unsweetened almond milk
TOPPING:
- 1 tsp maple syrup
- 1 cup strawberries ( chopped)
Instructions
1 - In a medium pot, add the washed brown rice, cinnamon powder, vanilla extract,
protein powder and almond milk. Put it on medium heat and stir.
2 - Reduce the heat to bring it to a gentle boil and cover the pot with a lid. Let it cook, stirring
occasionally, for 30 minutes, or until the rice is nice and tender and the pudding has thickened.
To serve
Add the pudding to a bowl and top with the chopped strawberries. Serve with
additional almond milk, maple syrup and a sprinkle of cinnamon. Enjoy!
Tips
Any leftovers or extra portions can be refrigerated in an airtight container for up to 3 days.
For a nut-free simply use coconut, oat or soy milk instead.
If you want to use additional toppings, some options are chia seeds, chopped nuts, sunflower seeds, pumpkin seeds, extra berries, almond butter or hemp seeds.
No maple syrup? Don't panic - replace with brown sugar or agave syrup.
Some cooking tips:
- don't forget to stir frequently!
- if the liquid 'goes up', quickly remove it from the fire (and lower it slightly).
- you can always add a little more milk if it needs it.
