CHOCOLATE OAT COOKIES

No flour, no butter, no sugar cookies. Seems too good to be true, right? Almost... but not quite - it is real, I promise! Plus, it's so easy to make that even I cannot go wrong with these cookies!


Ingredients

- 1 1⁄2 Banana (mashed)

- 1⁄2 tsp sea salt

- 40g peanut butter

- 1 1⁄4 cup oats

- 30g vegan dark chocolate (chocolate chips or chopped)

Instructions


1 - Preheat the oven to 180C and line a baking tray with parchment paper.

2 - In a large bowl, add the mashed banana, peanut butter and salt and mix well.

Then fold in the oats and chopped chocolate. Mix again until combined.

3 - Using a spoon, divide the mixture into 12 portions. Roll into balls and flatten

slightly using your hands. Place them onto the baking tray and bake for 10 to 12

minutes.

4 - Remove the cookies from the oven and leave them to cool for at least 5 minutes.


Tips

Easily make them gluten-free by using gluten-free oats.

Leftovers can be stored in an airtight container for 4 to 5 days, or even frozen!

You can enjoy these warm or cold, according to your preference!

For extra protein add a scoop of vegan protein powder into the cookie dough mixture.

If you want to vary flavours, swap the chocolate with apricots, nuts, seeds, grated carrot, grated apple, or raisins.

On a day when you want to 'calm down' your sweet tooth with as little calories as possible, you can make a variation of these by replacing the chocolate and peanut butter with just a scoop of your favourite vegan protein powder, mix it with the banana and oats and bake!
