BLACK BEAN, SOY YOGHURT AND LIME ON TOAST

If you know me, you know that I'm a bread guy


Ingredients

- 1 Slice wholemeal bread

- 1 cup black beans

- 100g soy yoghurt

- 1⁄2 onion

- 20g coriander

- 1 red chilli

- 1⁄2 tsp paprika

- salt and pepper

- 1⁄2 lime

- 1⁄2 small avocado (optional)


Instructions:


Beans

1 - Dice the red chilli and onion then put it to one side.

2 - Preheat a frying pan to medium heat, add a teaspoon of olive oil.

3 - Once the pan is hot enough add the chopped onion and cook for 5 minutes.

4 - Meanwhile half drain the beans, leave them aside.

5 - Then add a pinch of salt, paprika and half of the diced chilli to the onion, and cook

for another minute.

4 - Once the onion mix has softened, add the beans and leave to cook for another 5

minutes.


And here you have your bean mix.


Toast

5 -Preheat the oven at 180C. Toast the bread for 5 minutes.

6- While you are waiting for the bread, chop the coriander and slice the lime.

7- Place the bread on the plate (you can drizzle it with a teaspoon of olive oil or add

avocado slices if you are using some).

8- Add the beans to the toast and then serve with the fresh chilli, coriander, soy

yoghurt and lime wedges.
